Peach Almond Scones
A sweet tasty pastry!
Makes 8 scones

Bake time: 20 minutes
INGREDIENTS:
SCONES:
2 cups flour
3 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup frozen unsalted butter
½ cup + 2 tablespoons buttermilk
1 egg
1 teaspoon vanilla extract
¼ teaspoon almond extract
1 large peach
GLAZE:
1 ¼ cups powdered sugar
2 tablespoons + 1 teaspoon milk
1 teaspoon vanilla
INSTRUCTIONS:
1. Preheat the oven to 450.
2. Sift together flour, sugar baking powder, and salt.
3. In another bowl, mix together butter milk, egg, vanilla extract, and almond extract.
4. Dice up peach and add to the wet ingredients.
5. Cut the frozen butter into the dry ingredients, until it resembles coarse meal.
6. Make a well in the middle of the dry ingredients, and pour in the wet ingredients.
7. Quickly combine wet and dry ingredients with a few swift strokes – DO NOT OVERMIX.
8. Refrigerate the bowl for 15 minutes.
9. Transfer the scone batter to a floured surface. With floured hands, quickly work the batter into a ball. Press down to a uniform 3/4 inch thickness. Cut into 8 equal wedges with a very sharp knife. (The dough will be on the wet side). Carefully transfer the wedges to the pre-lined baking sheet, placing about 1.5 inches apart.
10. Brush the scones with: 3-4 Tablespoons of buttermilk (or substitute half & half or heavy cream)
11. Bake scones for 15-20 minutes until golden brown.
12. While the scones are baking, make the vanilla glaze. In a bowl combine powdered sugar, milk, and vanilla.
13. Allow scones to cool, then add glaze.
