Blueberry Scones
These are BERRY addicting!

INGREDIENTS:
1 ¼ cups of SONS fresh blueberries 🫐
2 ½ cups all-purpose flour
3 tablespoons sugar
4 teaspoons baking powder
2 teaspoons lemon zest 🍋 (can find at SONS)
Pinch of salt
½ cup cold butter, cut into pieces
2 SONS eggs beaten 🥚 (can find at SONS)
¾ cup half & half
Half & half to brush top of scones
Sugar to sprinkle on top of scones
ICING:
3 tablespoon powdered sugar
1 tablespoon half & half
INSTRUCTIONS:
SCONES:
Preheat oven to 400F.
Combine flour, sugar, baking powder, lemon zest, and salt in a bowl.
Using a pastry blender, cut in butter until mixture resembles course crumbs. Mix eggs and half & half.
Add both egg mixture and flour mix together and mix until dough forms.
Place dough on a flat surface and add blueberries. Fold the dough and blueberries together. Handle the dough as little as possible.
Roll dough into an 8-inch circle.
Cut into 8 wedges.
Place wedges 1-inch apart on an ungreased baking sheet.
Brush with half & half and sprinkle with sugar.
Bake for 13-16 minutes. Remove scones from baking sheet. Let cool.
ICING:
Combine powdered sugar and half & half together in a bowl.
Once scones are cooled, top with icing.
