Orzo Salad

With a hint of lemon!

Bake time: 10 minutes

INGREDIENTS FOR THE SALAD:

1 cup dry orzo pasta

1-2 cups of SONS vine ripe cherry tomatoes, halved

1-2 cups SONS cucumbers, sliced

½ cup SONS red onion, finely diced

½ olives, we used kalamata olives

½ feta cheese

FOR THE DRESSING:

3 tablespoons Sciabica lemon olive oil

2 tablespoons SONS lemons

½ teaspoon dried oregano

Pinch of salt & pepper

INSTRUCTIONS:

  1. Cook orzo pasta in a pot of boiling water. About 8-10 minutes. Drain and set aside to cool.

  2. In a large bowl, mix cooled orzo pasta, cherry tomatoes, cucumber, red onion, olives, and feta.

  3. For the dressing, mix together lemon olive oil, lemon juice, oregano, salt, and pepper in a small bowl. 

  4. Mix salad and dressing together.

  5. ENJOY!
